From hand-ground spice pastes to sunset feasts, Hyatt Centric Kota Kinabalu spotlights a chef-led Peranakan experience this Ramadan. From 19 February to 17 March 2026, the hotel introduces Peranakan Heritage Ramadan, a limited-time dining collaboration with Chef Sharon Ann De Souza, founder and chef-patron of Kuala Lumpur’s cult-favorite Nyonya Supperclub KL.
Designed for culturally curious diners and modern travelers who eat with intent, the campaign brings Peranakan home cooking out of the private dining room and into the urban rhythm of Kota Kinabalu in a first-of-its-kind collaboration.
A Chef-Led Story, Grounded In Craft
Chef Sharon Ann De Souza cooks the way her grandmother did: patiently, precisely, and with purpose. Her Nyonya Supperclub – now eight years strong – began as an ode to Malacca Baba-Nyonya and Kristang recipes, prepared using traditional stone grinders and time-honored techniques. That commitment to process has earned her a loyal following among locals and travelers alike, along with features in Alliance Française’s La Gazette and the South China Morning Post.

Today, Chef Sharon also serves as Peranakan Consultant for notable establishments, making her a respected voice in preserving and translating Peranakan cuisine for contemporary tables.

Expect a spread that assimilates the best of the Chinese and Malay world, boasts of local ingredients, and honors tradition without compromise.

- Gerang Assam Pari – Nyonya-style assam pedas fish
- Itek Masak Sio – duck legs stewed in ketumbar seeds and tamarind gravy
- Opor Ayam – chicken in a white sauce scented with nutmeg, peppercorns, and star anise
