Langkawi, Malaysia, June 2019 – The beach-front Tide Restaurant at The Westin Langkawi Resort & Spa will be transformed into a gastronomic dining experience with flavors and scents of the Middle East this June, with the Amaseena food festival, The Scents of Arabian Nights.
From June 17 to August 31, 2019 the creative team from acclaimed al-fresco dining restaurant, Amaseena of The Ritz Carlton, Dubai, located on the shores of the Arabian Gulf, Junior Executive Sous Chef Rami Al Maket and Chef de Cuisine – Amaseena, Hussam Al Hariri, will be showcasing century old, Arabic favorites from across the region from Magreb to the Arabian Peninsula, for the first time in Langkawi!
Reflecting the rich culture, flavors and diverse cooking methods of these cuisine with its unique ingredients and spices, the menu for The Scents of Arabian Nights will be the finest choices of Amaseena’s signature dishes.
With a selection of homemade Labneh spiced with Kaak to Salads and Mezze such as Muhamarah (roasted crushed nuts with spicy chili pomegranate and cumin), and Eggplant Mutable (smoked eggplant dip mixed with yogurt garlic and tahini), to delicious traditional Lamb Tartar, the list goes on to include hot starters like Harrak Ispaoo (traditional Damascus lentils cooked with tamarind, coriander, garlic and pomegranate), Pide (Turkish flat bread topped with cheese, sausage or chicken) and Persian Prawns (Grilled saffron prawns with tamarind coriander sauce).
The culinary journey enters the main course with Cherry Kebab (Aleppo Lamb kufta cooked with cherry sauce), Lamb Prunes (Moroccan lamb tagine cooked in clay with dried fruits and roasted almonds) and Beef Kufta Tabrizi (Persian kufta with stuffed dried fruits and nuts served with cherry rice), to mouthwatering grills such as Charmoula Lobster, Arabic Mixed Grill and Sausage Kufta, to name a few.
All these are accompanied by a host of side dishes such as Amaseena spiced rice, Batata Harra (Potato cooked with Chili garlic and coriander), and Vegetable Charmoula (steamed carrot, cauliflower, green beans and baby marrow).
Seal the deal with sweet favorites such as Cream Kunafa (traditional kunafa with cardamom syrup and pistachio ice cream), Mohalabyeh (milk pudding with orange blossom water and dried apricot puree) and Pistachio Mafroki (roasted pistachio puree stuffed with ice cream served with rose water milk sauce).
“We are excited to showcase Arabic cuisine from Amaseena here in Langkawi at The Westin Langkawi Resort & Spa, for the first time. Every dish has a story to tell and each chef a passion that they can share with every guest,” said Head Chef Rami Al Maket. “There will be live carvings, grill stations, hot and cold mezzeh and live stations to demonstrate our authentic cooking methods from the different regions.”
